    What language is that????

    It's English. Yes, seriously.

To give a more useful answer, this writing was made specifically for Tunic. Most things in the game are written in this script, and that's entirely intentional to create a feeling of inexperience and discovery.

Trunic is the writing. The language is (phonetic) English. You'd have no trouble understanding if it was spoken.

It was illustrated to be more fitting for the game, even though if what you're saying is true

It's a fairly big spoiler for the game, but:
The language is not written as English letters, but it is genuinely meant to be spoken like English. Each symbol is 1-2 sounds that make up a word, then is strung together with a line through the middle.
For instance, the first "word" the fox is saying is three symbols that come to "W-uh-T", which is, of course, "what".
Though funnily enough, "are" and "at" are misspelled here, with "are" not needing the three lines within the hexagon, and the "at" needing a small circle at the bottom tip.
